Heat the oven to 320°F (160°C). Grease and flour a loaf pan so the cake releases cleanly.
Beat the butter, margarine, and shortening for 2–3 minutes until smooth. Keep the mixture cool, not melted.
Pour in the sugar little by little and beat for 3–4 minutes. The batter should look lighter and fluffy.
Add eggs one by one, beating after each until the batter comes back together. Scrape down the bowl as needed.
Add the flour in two additions. Mix on low just until you don’t see dry flour; overmixing can make the cake dense.
Mix in the vanilla. Slowly pour in the 7UP/lemon-lime soda and gently fold with a spatula, keeping some bubbles in the batter.
Transfer batter to the pan and level the top. Bake for about 90 minutes; start checking around minute 75. A tester should come out with a few moist crumbs.
Let the cake rest in the pan for 10–15 minutes, then turn out onto a rack. Slice once fully cooled for neat pieces.
