Make the syrup
Add the water, sugar, and lemon juice to a small saucepan. Warm over medium heat, stirring just until the sugar dissolves.
Thicken slightly
Once it starts to boil, stop stirring. Let it simmer gently for 3–5 minutes so the syrup concentrates a bit.
Add the almonds
Lower the heat and gradually add the almond flour. Stir quickly with a wooden spoon until the mixture clumps and pulls away.
Knead until smooth
Let it cool until just warm, then transfer to a clean surface. Knead for 2–3 minutes; lightly dampen your hands with a little water if it sticks.
Rest the paste
Wrap the almond paste tightly in plastic wrap. Refrigerate for 7 days to firm up and let the flavor settle.
Soften to use
Before using, bring it to room temperature for 10–15 minutes. If needed, knead in a tiny splash of water to make it pliable again.
