Heat the oven to 320°F (160°C). Lightly grease a loaf pan and dust with the flour; tap out the excess.
In a large bowl, whisk the egg and sugar for 1–2 minutes. Stir in the vanilla until combined.
Fold in the grated or finely diced apple. Don’t squeeze it too dry; a little juice helps keep the loaf moist.
In a separate bowl, combine flour, cinnamon, baking soda, and salt so the leavening distributes evenly.
Add the dry mixture to the wet mixture in 2–3 additions. Fold with a spatula just until you no longer see dry flour; avoid overmixing.
Add the walnuts and stir gently until they’re spread through the batter.
Pour the batter into the pan and level the top. Bake for about 170 minutes. Start checking around minute 150; a toothpick should come out clean.
Let the loaf sit in the pan for 10–15 minutes, then turn out onto a rack. Slice after it cools completely for clean pieces.
