Heat the oven to 180°C / 350°F. Lightly grease a pie dish with the oil or butter so the slices release easily.
Warm a skillet over medium heat and cook the bacon briefly until it renders some fat. Add the chopped onion and sauté for 3–4 minutes, just until softened. Keep it from over-browning.
In a bowl, whisk the eggs. Pour in the milk. Add the flour gradually and mix until smooth. Season lightly with salt since bacon can be salty.
Arrange the sliced potatoes in an even layer in the dish. Scatter the bacon-onion mixture over the top.
Pour the egg-and-milk batter evenly over everything. Bake for about 45 minutes, until set and lightly golden. If the center still jiggles, bake 5 minutes more.
Let the pie rest for 10 minutes before slicing so it holds together nicely. Serve warm or at room temperature for breakfast or brunch.
