Heat the oven to 375°F (190°C). Lightly grease a medium baking dish so nothing sticks.
Peel the potatoes and slice them thinly. Keeping the slices similar in thickness helps them bake evenly.
In a bowl, whisk together mayonnaise, sour cream, milk, eggs, and mustard until smooth. Stir in parsley, salt, and pepper if you’re using them.
Add the sliced potatoes to the baking dish, pour the sauce over, and gently toss so the slices are well coated.
Sprinkle the shredded melting cheese over the top, then finish with the grated Parmesan.
Bake for 30 minutes, until set and lightly browned on top. Let it rest for 5 minutes, then slice and serve warm.
