Dice the onion. Slice the carrots into half-moons and finely chop the celery. Rinse and thinly slice the cabbage.
Pour the tomato juice into a pot. Add cabbage, onion, carrots, and celery, then stir. If it looks too thick, add 1–2 cups of water.
Heat over medium-high until it reaches a gentle boil. Stir now and then so nothing sticks.
Lower the heat and simmer for 30 minutes, or until the vegetables are soft. Taste and adjust with salt and pepper if you like.
Let it sit for a couple of minutes, then ladle into bowls. When reheating, add a splash of water to loosen the texture if needed.
