Heat the oven to 350°F (180°C). Grease a baking pan with the vegetable shortening; lining with parchment is optional but helps with clean slices.
Beat the butter and sugar for 1–2 minutes until evenly combined. Don’t overdo it—just make it smooth.
Mix in the egg and vanilla extract until the batter looks glossy and uniform.
In a separate bowl, combine flour, baking powder, and salt. Add to the wet mixture and fold gently just until you don’t see dry flour.
Add the oats, chopped cherries, walnuts, and pecans. Stir lightly so the mix-ins are well distributed without overmixing.
Transfer the batter to the prepared pan and spread it into an even layer, reaching the corners.
Bake for 25 minutes, until the edges are set and the center is slightly soft. Keep an eye on it so it doesn’t dry out.
Let the bars cool completely, then cut into 24 pieces and serve.
