Slice the chicken breast into long, thin strips. Keep the thickness even so everything cooks at the same pace.
In a bowl, stir together peanut butter, honey, soy sauce, grated garlic, and grated ginger until smooth. If it’s too thick, loosen with 1–2 tbsp warm water.
Coat the chicken with about half of the sauce. Cover and let it sit for 30 minutes. Reserve the remaining sauce for serving.
Thread the chicken strips onto skewers in a loose wave pattern so heat reaches the meat quickly and the sauce clings well.
Heat a grill or heavy skillet until very hot. Cook the skewers for about 5 minutes total, turning frequently until lightly charred and cooked through. Don’t overcrowd the pan.
Plate the skewers and drizzle with the reserved peanut sauce or serve it on the side. Finish with chopped cilantro and sesame seeds, then serve right away.
