Trim and dice the chicken breast into small cubes.
Heat oil in a pan, add chicken and salt, then cook until juices evaporate.
Push chicken aside, pour oil in the center, add paprika, red pepper flakes, black pepper, and cumin, then stir-fry.
Pour in about a quarter teacup of water and mix to infuse flavors.
Place half pita over the chicken, press gently to warm through.
Spread chopped parsley and diced tomatoes on the bread, then top with cooked chicken.
Repeat with the remaining pita halves, dipping bread in water if desired.
Serve hot and enjoy your homemade chicken tantuni.
