Brown the beef
Set a large pot over medium heat. Add the ground beef and cook, breaking it up, until no longer pink.
Add pepper and garlic
Stir in the chopped green pepper and cook for 3–4 minutes to soften. Add the garlic and cook for 30–60 seconds; keep it moving so it doesn’t burn.
Stir in tomatoes and paste
Add the diced tomatoes, tomato paste, and tomato sauce. Mix well until the paste dissolves into the sauce.
Season the sauce
Add black pepper, oregano, and basil. Stir and bring the sauce close to a gentle simmer.
Simmer low and slow
Reduce heat to low. Simmer for about 50 minutes with the lid slightly ajar, stirring now and then to prevent sticking. If it gets too thick, splash in a little water.
Finish and serve
Taste and adjust seasoning if needed. Spoon over hot spaghetti or serve on the side.
