In a bowl, mix the instant coffee and light brown sugar. Pour in the boiling water and stir until fully dissolved.
Stir in the ground cinnamon and mixed spice. Mix well so you don’t end up with any clumps.
Add the cold water, milk, and vanilla extract. Whisk until smooth, or shake in a tightly sealed jar.
Refrigerate until very cold (at least 30 minutes). If you’re short on time, chill quickly with a few ice cubes.
Divide the ice cream between 4 glasses. Slowly pour the chilled coffee mixture over the scoops.
Dust with cocoa powder. Add a cinnamon stick, a very thin lime slice, and a little grated chocolate if you like, then serve right away.
