Peel the potatoes and cut them into big chunks. Mince the garlic so it blends in easily as it cooks.
Put the potatoes in the Crock Pot. Sprinkle over the salt and garlic. If the pot looks very dry, add 1 tablespoon of water.
Scatter the cream cheese pieces over the potatoes. No need to fully mix yet—the cheese will soften and stir in later.
Cover and cook on LOW for 6 hours. Try not to lift the lid often, since that drops the temperature and slows cooking.
Once the potatoes are tender, stir gently until the cream cheese coats everything. For a smoother texture, lightly mash a few pieces. Serve hot.
