Pit the dates and chop them small so they soften quickly and blend smoothly into the mixture.
Add sugar, milk, and butter to a medium saucepan. Warm over medium heat, stirring until the sugar dissolves.
Stir in the chopped dates. Cook for about 10 minutes, stirring often, until the dates break down and the mixture thickens; keep it moving so it doesn’t stick.
Turn off the heat and mix in the vanilla. Fold in the chopped walnuts until evenly distributed.
Let it cool for 2–3 minutes so it’s warm, not scorching. Scoop small portions and roll into bite-size balls, or spread on parchment and cut into pieces once set.
Cool completely at room temperature. Serve once firm, and store in an airtight container if you’re keeping them for later.
