Rinse and peel the carrots, then shred them using a medium or large grater.
Drain the unsweetened pineapple very well. Chop into small pieces so each bite is evenly mixed.
In a bowl, add carrots, pineapple, and raisins. Spoon in the low-fat yogurt and fold until everything is coated.
Cover and refrigerate for at least 2 hours. Give it a quick stir right before serving for a fresh, even texture.
