In a small bowl, whisk together the sage, coarse black pepper, hard apple cider, and soy sauce until well combined. Start with 1 tbsp cider for a bolder soy flavor, or go up to 3 tbsp for a lighter, fruitier note.
Pour the marinade into a zip-top bag or a glass container. Add your chicken portion and turn it a few times so every surface is coated. (This recipe provides the marinade; add chicken as needed for 1 serving.)
Refrigerate for at least 25 minutes. If you have extra time, 1–2 hours helps the seasoning sink in more evenly. Flip the bag/container once or twice while it marinates.
Take the chicken out about 10 minutes before cooking. Discard the used marinade, or boil it for 3–5 minutes if you want to use it as a cooked sauce.
Cook the chicken using your preferred method (skillet or oven) until done. Total cook time can run up to about 90 minutes depending on the cut, so adjust to your chicken pieces.
