Heat the oven to 150°C / 300°F. Grab a baking dish with a lid, or plan to seal it tightly with foil to keep moisture in.
In a small bowl, whisk together the lime juice, olive oil, and garlic until well combined.
Place the chicken breasts in the baking dish. Pour the sauce over them and turn the chicken so it’s coated all around.
Cover with the lid or seal with foil. Bake for about 3 hours 30 minutes, basting once in a while with the pan juices to keep the meat juicy.
Let the chicken rest for 5–10 minutes before slicing. Spoon the garlicky pan sauce over the top and finish with parsley or scallions if you like.
