Pit the apricots. In a mixing bowl, mash them with a fork or potato masher until you like the texture.
Add the lemon juice and lemon zest. Pour in the sugar and mix for 1–2 minutes so the sugar starts dissolving into the fruit.
Add the water gradually and stir again. If you want it thicker, hold back a little water and check the consistency.
Cover the bowl and let the mixture sit at room temperature for about 20–30 minutes, stirring once or twice to help the sugar melt.
Spoon into clean, dry jars, leaving a little headspace. Close the lids and freeze. To use, thaw a jar in the fridge; once opened, keep it refrigerated.
