Wash the green tomatoes, trim the stem end, and slice into 1/4–1/2 inch rounds. Pat lightly dry so the flour coating sticks well.
In a shallow plate, combine the flour, sugar, salt, and black pepper. Stir until evenly blended.
Dredge each tomato slice in the flour mixture, coating both sides. Shake off the excess so the crust stays light.
Melt the butter in a wide skillet over medium heat. Let it get hot but not smoking; if it starts browning too fast, lower the heat slightly.
Place the coated slices in a single layer. Cook 2–3 minutes per side until lightly golden. Work in batches to avoid crowding the pan.
Transfer to paper towels to drain. Taste and tweak salt and pepper if needed, then serve warm.
