Wash the potatoes; peel if you like. Cut into similar-size pieces so they cook evenly.
Boil in salted water for about 8–10 minutes, until fork-tender but not falling apart. Drain and let the steam escape for 2 minutes.
Stir the mayonnaise and garlic together until smooth. Taste, then add salt; adding garlic gradually helps you control the bite.
Place the warm or room-temperature potatoes in a serving bowl. Spoon over the sauce and fold carefully so the pieces stay intact.
Sprinkle with parsley. Serve right away, or chill for 10 minutes if you want it a little more set for tapas-style serving.
