Stir the crushed garlic into 1/2 cup warm water. Let it sit for 5 minutes so the flavor infuses.
In a large bowl, combine 2 cups warm water with sugar and salt. Pour in the garlic water and mix again.
Add the flour a bit at a time. Stir at first, then knead by hand once it comes together. Aim for a soft dough that holds its shape; adjust flour as needed.
Place the dough in a lightly floured bowl, cover, and rest in a warm spot for about 60–90 minutes, until noticeably puffy.
Heat the oven to 220°C / 425°F. Divide the dough into 1–2 crusts, stretch it onto a pan, and par-bake for 8–10 minutes before adding toppings.
Add sauce and toppings. Bake 5–10 minutes more, until the edges brown and the bottom is cooked through. Slice and serve.
