In a small bowl, whisk together soy sauce, brown sugar, bourbon, black pepper, and garlic powder until the sugar dissolves.
Place the salmon fillet in a zip-top bag or shallow dish. Pour in the marinade and coat all sides. Refrigerate for 20 minutes.
Heat the grill to medium. Lightly oil the grates if needed, then let them get hot.
Remove the salmon from the marinade and let excess drip off. Set it on the grill skin-side down. Cook, turning as needed, until the surface is lightly caramelized and the center turns opaque.
Let the salmon rest for 2–3 minutes before serving. Add a little extra cracked pepper on top if you like.
