In a bowl, whisk together the lemon juice, olive oil, and lemon-pepper seasoning until well combined.
Add the chicken cutlets and turn to coat. Cover and refrigerate for 45 minutes; flipping once helps the flavor spread evenly.
Preheat a grill or grill pan to medium-high. If using a skillet, heat it well and leave only a very thin sheen of oil to reduce sticking.
Lift the cutlets out of the marinade and let excess drip off. Cook 2–4 minutes per side, about 15 minutes total, until the meat is opaque and juices run clear.
Let the chicken rest for 2–3 minutes, then slice and serve. It pairs nicely with salad, rice, or roasted vegetables.
