Cut the avocado, remove the pit, and scoop the flesh into a bowl. Mash with a fork; a slightly chunky texture is totally fine.
Stir in the sour cream and lime juice. The lime also helps slow down browning.
Mix in the salsa, minced garlic, and chopped sweet onion. Fold gently so you don’t over-mash.
Add cilantro, parsley, and diced tomatoes. Seeding the tomatoes helps keep the dip from getting watery.
Stir in sliced black olives and season with salt. Taste and add a little more lime if you want it brighter.
Chill for 5 minutes, then serve with tortilla chips or as a topping for tacos and sandwiches. Press plastic wrap directly on the surface to reduce browning.
