Heat beef suet in a pan on low until fully melted.
Add cubed beef and cook until the juices evaporate and the meat starts to brown.
Stir in olive oil, salt, black pepper, paprika and red pepper flakes.
Combine julienned onion, parsley and diced tomatoes in a bowl.
Add salt and sumac, then mix well.
Cut each lavash bread in half lengthwise.
Press each piece onto the meat to lightly coat with oil.
Layer meat and salad on lavash, squeeze lemon and fold the sides to roll.
Serve hot wraps with pickles on the side.
