Heat the oven to a low temperature (about 300°F / 150°C). Prepare a large roasting pan and scatter the celery pieces in the bottom.
Stir the honey and soy sauce until smooth, then mix in the dried sage.
Pat the suckling pig dry. Brush or rub the honey-soy mixture over the surface in a thin, even layer.
Place it on the pan. If the pan looks dry, pour 1–2 cups hot water into the bottom; keep the liquid away from the top so it still roasts.
Roast for about 11 hours 40 minutes. Check occasionally; if it’s browning too fast, tent loosely with foil.
Let it rest 20–30 minutes before carving. Slice and serve, spooning a little pan juice over the meat if you like.
