Heat the oven to 190°C / 375°F. Line a baking sheet with parchment or lightly flour it so the dough won’t stick.
In a large bowl, whisk together all-purpose flour, whole wheat flour, baking soda, baking powder, and brown sugar until evenly blended.
Pour in the buttermilk and stir with a spoon or spatula just until the dough comes together. Don’t overmix; keeping it gentle helps the crumb stay tender.
Turn the dough onto a lightly floured surface and form a round loaf. Score a deep cross on top so it bakes evenly and opens up nicely.
Place on the prepared sheet and bake for 45 minutes, until the top is darkened and the loaf sounds hollow when tapped underneath.
Let it cool on a rack for 10–15 minutes before slicing. Serve warm or at room temperature.
