Heat the oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
Beat the butter, margarine, and 3/4 cup powdered sugar until light. Mix in the salt and vanilla.
Stir in the flour in 2–3 additions. Once it starts to clump, gently press it together with your hands. Don’t overwork it so the cookies stay tender.
Scoop out small walnut-size pieces, roll into balls, and place them on the sheet with a little space between each.
Bake for about 15 minutes. Pull them out when the bottoms are lightly colored and the tops are still pale.
Let the cookies sit on the tray for 5 minutes. While warm, roll in powdered sugar, then cool completely on a rack. For a thicker coating, roll again once cooled.
