Heat the oven to 350°F (175°C). Grease a medium cake pan; line the bottom with parchment if you like easier release.
In a large bowl, whisk together the flour, granulated sugar, and lemon-flavored powdered gelatin until evenly combined.
Pour in the melted (slightly cooled) butter, water, egg, and lemon juice. Stir in the lemon zest.
Whisk until the batter is smooth and no dry pockets remain. Don’t overmix—stop as soon as it comes together.
Transfer the batter to the pan and level the top. Bake for about 35 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake rest in the pan for 10 minutes, then turn out onto a rack to cool completely. Dust with powdered sugar before serving.
