Heat a large skillet over medium heat. Melt the butter, add the onion, and cook for 5–6 minutes, stirring, until soft and translucent.
Stir in the lemon zest, lemon juice, and sugar. Cook for 1–2 minutes so the sugar dissolves, then lower the heat to keep the sauce gentle.
Add the lamb chops to the skillet. Sear over medium-high heat for 3–4 minutes per side until nicely browned. If needed, cook in batches so the pan isn’t crowded.
Return all chops to the skillet (if you removed any). Add the lemon slices, turn the chops in the sauce, and warm together for 2–3 minutes.
Turn off the heat and sprinkle in the chopped mint. Don’t overcook the mint—adding it at the end keeps it fresh. Serve right away.
