Set a pot over medium heat. Warm the olive oil, add the onion, and cook for 3–4 minutes until it turns soft.
Stir in the ginger, cumin seeds, turmeric, and garlic. Cook for 30–60 seconds, stirring, until fragrant.
Add the cauliflower and tomatoes. Cook for 2–3 minutes, stirring, so the tomatoes start to break down a bit.
Tip in the rinsed lentils and pour in the water. Stir once and bring to a boil.
Reduce to low heat and keep the lid slightly ajar. Simmer 30–35 minutes, until the lentils are tender and the dal thickens. If it gets too thick, add a splash of water.
Stir in the salt. Right before turning off the heat, mix in the lime juice and sprinkle in the cilantro.
Serve hot over cooked basmati rice. Long-grain rice works well too.
