Heat the oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it so the cookies release easily.
Mix brown sugar, granulated sugar, and margarine until smooth and combined. Keep it brief—don’t overbeat.
Add the eggs one at a time, stirring after each. Mix in the vanilla until the batter looks even.
Blend in the peanut butter. Sprinkle in the baking soda and mix so it’s evenly distributed.
Add the oats and fold just until a scoopable dough forms. Stop mixing once everything is incorporated.
Drop spoonfuls of dough onto the sheet, leaving space between each one. A slightly damp spoon helps portion neatly.
Bake for about 15 minutes, until the edges are lightly set. Let the cookies sit on the pan for 5 minutes, then move to a rack to cool completely.
