Wipe the mushrooms clean and slice them. Try not to soak them in water so they brown instead of steam.
Warm a large skillet over medium-high heat. Add the olive oil and swirl to coat.
Add mushrooms in an even layer. Cook 5–7 minutes, turning occasionally, until they release moisture and start to brown.
Stir in garlic, oregano, salt, and pepper. Cook 30–60 seconds just until fragrant; keep the garlic from browning too much.
Lower the heat. Sprinkle in the Parmesan and toss for about 1 minute so it lightly coats the mushrooms.
Turn off the heat and fold in parsley. Serve warm as a side dish, or spoon over toast, pasta, or grilled chicken.
