Heat the oven to 220°C / 425°F. Line a baking sheet with parchment and lightly grease it with olive oil so the salmon releases easily.
In a small bowl, whisk together lemon juice, lemon zest, mustard, dry mustard, sour cream, and horseradish until smooth.
Place the salmon fillets on the tray. Sprinkle evenly with salt and black pepper.
Spread the mustard sauce over the top of each fillet. A little sauce around the edges is fine; it bakes up nicely.
Bake for 10–12 minutes. If your fillets are thick, add 1–2 minutes more; it’s done when the flesh is opaque and flakes easily.
Let it rest for 2 minutes, then serve with a simple salad or steamed vegetables.
