Scrub the new potatoes well. Place them in a pot, cover with water, and bring to a boil. Cook for 12–15 minutes, until a fork goes in easily, then drain.
Set a large skillet over medium-low heat. Melt the butter, add the garlic, and stir for 30–60 seconds until fragrant. Keep it gentle so the garlic doesn’t brown.
Add the drained potatoes to the skillet. Turn and toss for 5–8 minutes so they’re evenly coated and lightly glazed with the garlic butter.
Season with salt and black pepper to taste. Finish with chopped herbs if you’re using them, and serve warm as a simple potato side dish.
