In a large bowl, stir peanut butter, corn syrup, and confectioners’ sugar until smooth and evenly combined.
Pour in the graham cracker crumbs and mix until a thick, moldable dough forms. If it feels loose, let it sit for a couple of minutes.
With lightly greased hands, scoop small portions and roll into balls or press into little discs. Dust with a bit of sugar if needed.
Place on a parchment-lined tray and refrigerate for 30–45 minutes so they firm up. Store in an airtight container in the fridge.
