Add the tahini and honey to a mixing bowl. Stir until smooth and evenly combined.
Sprinkle in the shredded coconut gradually. Keep mixing until the mixture looks uniform and holds together when pressed.
Add the chopped pistachios and gently stir so they’re distributed throughout.
Line a rectangular mold with plastic wrap, leaving overhang for easy lifting. Transfer the mixture in and press down firmly to compact it.
Cover the top with plastic wrap. Chill for a few hours until set, then lift out, slice, and serve.
