Heat the oven to 350°F (175–180°C). Line baking sheets with parchment paper or lightly grease them so the cookies release easily.
Beat the softened butter with granulated sugar and brown sugar for 2–3 minutes, until it looks creamy and lighter in color.
Mix in the eggs one at a time, beating briefly after each addition. Stir in the vanilla until smooth.
In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Add the dry mix to the wet mix in 2–3 additions, mixing just until the dough comes together.
Stir in the rolled oats with a spatula. Fold in the chocolate chips (or candy-coated pieces) so they’re evenly distributed.
Drop walnut-sized scoops of dough onto the sheet, leaving space between them. Bake for about 10 minutes, then pull them when the edges are lightly set. Let sit on the tray for 5 minutes before moving to a rack.
