Heat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it to prevent sticking.
Place the salmon fillets on the sheet. Pat the tops dry with a paper towel so the coating grips well.
Brush a thin, even layer of mayonnaise over the top of each fillet, reaching the edges.
Sprinkle lemon pepper evenly over the mayo. If your blend is salty, use a slightly lighter hand.
Divide the grated Parmesan over the fillets. Let it cover the surface without pressing down.
Bake for 20–25 minutes, until the fish flakes easily with a fork and the top is lightly browned.
Let the salmon rest for 2 minutes out of the oven. Serve with lemon wedges if you like.
