Add the sugar and port wine to a medium saucepan. Warm over medium heat, stirring until the sugar dissolves fully.
Once it reaches a gentle boil, reduce the heat. Simmer for 10–15 minutes until it slightly thickens and coats the back of a spoon; stir now and then so it doesn’t boil over.
Pour the hot jelly into a clean jar. Let it cool to room temperature, then cover and refrigerate until cold and set.
Use with a cheese board, spoon over cookies, or drizzle on desserts. If it sets too firmly, loosen with 1–2 tablespoons warm water before serving.
