Heat the oven
Preheat the oven to 400°F (200°C). Lightly oil a baking tray or line it with parchment so the fish won’t stick.
Set up the fish
Place the cleaned red snapper on the tray. For better flavor, score the skin with a couple of shallow cuts.
Mix the lemon seasoning
In a bowl, combine green onions, lemon juice, dried oregano, and black pepper. Spoon the mixture over the fish and into the cavity if possible.
Roast
Roast for about 18–22 minutes, depending on thickness. You’re looking for opaque flesh that flakes easily with a fork.
Add cheese and olives
Remove the tray and sprinkle on the crumbled white cheese and chopped olives. Return to the oven for 2 minutes so it warms through without drying out.
Rest and serve
Let the fish rest for 2–3 minutes. Drizzle any pan juices over the top when serving.
