Add 1 cup water and 3/4 cup sugar to a medium saucepan. Warm over medium heat, stirring until the sugar fully dissolves.
Once it reaches a gentle boil, pour in 2 1/2 cups water and stir in the remaining 3/4 cup sugar. Bring back to a boil and simmer for 10–12 minutes; keep an eye on it so it doesn’t boil over.
Drop a little syrup onto a plate. If it coats slightly and runs more slowly, it’s starting to thicken. Simmer 1–2 minutes longer if you want it a bit thicker.
While hot, transfer to a clean jar and close the lid. Let it cool to room temperature, then store in the refrigerator.
