Grate the onion, then squeeze out the juice well. Grate the garlic and set it aside.
Add the ground beef to a bowl. Stir in onion, garlic, egg, breadcrumbs, and spices, then knead for about 3–4 minutes until it comes together. If using parsley, mix it in at the end.
If you have time, cover and chill for 1 hour. If not, let it rest for 10 minutes and move on.
Divide into equal portions. With slightly wet hands, shape into small rounds or ovals.
Heat a pan and add the olive oil. Cook over medium heat, browning both sides. Keep the heat moderate so they cook through without burning.
Let the meatballs rest for 2 minutes, then serve warm. Salad or rice works well on the side.
