Add the instant espresso powder to a mixing bowl. Pour in the cold water and stir briefly to loosen any dry bits.
Whisk with a hand mixer or whisk for about 4–8 minutes, until the mixture turns lighter in color and holds a thick, spoonable foam.
Spoon the whipped coffee foam evenly into two glasses. Smooth or mound the top with a spoon.
Serve immediately for the best texture. If you want, pair it with hot or iced milk on the side.
