Cook the noodles according to the package, then drain well. Slice the vegetables and meat. Measure the soy sauce so the stir-fry can move quickly once the pan is hot.
Heat a large skillet or wok over high heat. Add the oil, then stir-fry the meat for 2–3 minutes until it changes color and starts to brown. Avoid overcrowding the pan.
Toss in the vegetables and garlic. Stir-fry for 2–3 minutes so they soften slightly but still keep some bite.
Add the drained noodles. Drizzle in 3/4 cup soy sauce, then increase toward 1 cup to taste. Stir and toss over high heat for 1–2 minutes until everything is evenly coated.
Serve right away while hot. If you like, top with sliced scallions or a pinch of sesame seeds.
