Crack the eggs into a bowl, add salt and pepper, and whisk for 20–30 seconds until combined.
Heat a nonstick skillet over medium heat. Add the butter and let it melt without browning.
Pour the eggs into the skillet and gently swirl so the mixture spreads evenly.
When the edges start to set, scatter the shredded cheddar over the top.
Cook 8–10 minutes until the bottom is set and the top is slightly moist. Rest 1 minute, then slice and serve.
