Slice the chicken breast into thin strips. Grate the garlic and fresh ginger so everything is ready before the pan gets hot.
In a bowl, whisk together soy sauce, water, sugar, and vinegar. Add the cornstarch and whisk until smooth with no lumps.
Heat a wide skillet until hot. Add the chicken and stir-fry over high heat until it starts to brown.
Stir in the garlic, fresh ginger, and ground ginger. Cook for 30–60 seconds, just until fragrant; don’t let it scorch.
Pour in the sauce. Once it bubbles, keep stirring for 1–2 minutes until it turns glossy and lightly thickened.
Turn off the heat and serve right away. It goes well with rice, noodles, or steamed vegetables.
