Heat the oven to 350°F / 175°C. Grease a sheet pan or line it with parchment.
Whisk the eggs and sugar for 1–2 minutes. Stir in the oil, then add the shredded zucchini and vanilla.
In a separate bowl, combine flour, baking powder, salt, and baking soda. Fold into the wet mixture just until no dry streaks remain; don’t overmix.
Spread the batter evenly in the pan. Bake for about 25 minutes, until a toothpick comes out clean or with a few crumbs.
Let the bars cool completely in the pan. This helps the topping sit nicely and not melt.
Beat the softened margarine and butter until smooth. Add cream cheese and vanilla. Mix in powdered sugar gradually; add a little milk if you want it softer.
Spread the topping over the cooled base. Chill 15–20 minutes to set, then slice into bars and serve.
