Heat the oven to 180°C / 350°F. Lightly grease a quiche or pie dish so the slices release easily.
Put the grated zucchini in a colander and let it sit for 5 minutes. Gently squeeze out excess moisture to keep the quiche from turning watery.
Whisk the eggs in a bowl. Add the half-and-half, then mix in the flour, salt, and pepper until smooth.
Stir in the zucchini, onion, cheddar, and Swiss cheese. Mix just until everything is evenly distributed.
Pour the mixture into the prepared dish. Bake for 35 minutes, until the center is set with only a slight jiggle and the top is lightly browned.
Let it cool for 10 minutes before slicing. Serve warm or at room temperature.
