Pat the tuna steaks dry with paper towels. If needed, gently press to even out thickness so they cook at the same pace.
Spread the flour on a plate. Dredge each steak lightly and shake off the excess so the coating stays thin.
Warm a large skillet over medium to medium-high heat. Add the butter and let it melt; once the foaming settles, you’re ready to sear.
Place the steaks in the pan. Cook about 2–3 minutes per side until browned; don’t overcook or the tuna can dry out.
Move the tuna to plates. Squeeze lemon over the top or serve with wedges, and spoon a little of the buttery pan juices over if you like.
